Hey guys got a great high protein, low carb (maybe no carb) meal for ya. This one is really easy. Don’t be scuuuured of pork, its delish!
*I doubled this.
1 1/4 lb pork tenderloin
1 1/2 c. frozen blueberries, thawed
1/4 c. cider vinegar
2 tsp. honey
Salt & Pepper
Bag of frozen broccoli
Fill bag of broccoli with warm water to thaw broccoli.
Heat oven to 450 degrees. In a bowl mix olive oil, honey, cayenne, paprika, garlic, salt and pepper. Should be thick. Place tenderloin in a baking dish and rub/brush half the mixture on. Bake for 15 minutes, remove from oven and rub/brush second half of oil mixture. Bake for another 15-20 minutes.
In a small sauce pot over medium heat cook blueberries, vinegar, honey, salt and pepper. Cook 5 min or until thickened. You can use a potato masher or just a fork to break down the blueberries. I used my new immersion/hand blender. Serve sauce over the pork.
