I was looking for something hearty and fun for the week so I came up with this healthy alternative to regular BBQ chicken pizza. All the same flavors and most of the same textures are there without all of the fat and carbs of a tradional crust. For those of you eating Paleo, this is a great recipe to add to the arsenal.
BBQ Chicken Pizza usually is topped with cilantro and of course has cheese. I decided to leave the cilantro off because I would be eating this throughout the week and was worried it wouldn’t keep. I decided to leave the cheese off because I really wanted to keep it Paleo. I was worried that I was going to miss having the cheese on there but it tunred out to be the right choice. The BBQ sauce gave you a lot of the creaminess the cheese gives and the all-meat crust is very rich. Cheese would’ve been too much.
I have to say this turned out really great. This is something I will make many times more.
1 pound ground chicken
1 pound ground turkey
1 red onion, sliced
1 package of bacon
BBQ Sauce (I used Gayle’s Extra Sassy Sweet N Sassy BBQ Sauce from Whole Foods, I’m not kidding)
2-3 tbs Montreal Steak Seasoning
Cilantro, chopped (optional)
Cook bacon, roughly chop and set aside. Sauté onions until soft and fragrant, set aside.
Preheat oven to 450 degrees. Mix eggs and seasoning with the ground chicken and turkey. Spray a cake pan or a pizza pan with cooking spray. OR you can use a 15 inch iron skillet like I did. Pack the mean mixture into the pan/skillet. Bake for 15-20 minutes or until done.
IF EATING LATER
Top the meatza with BBQ sauce, spreading evenly. Use as much as you want. Top with sautéed onions followed by the chopped bacon. Use your pizza cutter or a knife and cut into even slices.
IF EATING RIGHT AWAY
Do the same as above but turn your oven to broil and throw the meatza back in for about 5mins or until the bacon is sizzling. Then top with cilantro.
