Summer is just starting to ramp up and for me that means grilling. Fire up the grill and try to fit as much meat on there as possible. I wanted to switch things up a little and try something a little different. Glad I did because these skewers instantly turned into one of my favorite things to grill. Grilling the skewers with the bacon in between the chick caused everything to fuse together creating these delicious bites of baebqued chicken and bacon. You get tender and juicy chicken, with a salty crunch and a little heat from the bacon, cooled off by the BBQ sauce.
Next time I make these (there will be many), I will add big pieces of red onion and red, yellow or green peppers. Add some color and veggies in there.
6-7 boneless, skinless chicken breasts, cut into 1-inch cubes
1 tablespoon kosher salt
1 tablespoon cayenne pepper
1 tablespoon lemon pepper
2 tablespoons sugar
6 slices bacon (half a pack), uncooked, cut into 1/2-inch pieces
Your favorite BBQ sauce (I used Stubb’s)
10-12 12-inch metal skewers
Rinse off the chicken and pat dry with paper towels. Cut chicken breasts into 1-inch cubes. In a large tupperware (or Ziplock bag), mix chicken and salt and refrigerate for at least 30 minutes or up to 1 hour.
Pulse bacon in a food processor until it forms a smooth paste, about 30 to 45 seconds, scraping down the bowl occasionally. Then add spices to the bacon paste and blend for a few more seconds.
Add the bacon paste to the chicken cubes. Using your hands, coat chicken with the bacon paste. You can do this right in the large Tupperware. Thread chicken onto skewers. If the bacon paste builds up make sure its evenly distributed throughout the chicken. Make sure to get the bacon paste in between the chicken cubes.
Heat grill to high.
Place kebabs on grill and cook turning occasionally, until well browned on all sides (a little bit of char is good), about 10 minutes or so.
During the last few minutes of cooking, brush kebabs with BBQ sauce and continue to cook and rotate until you have a nice coating of BBQ sauce.
Remove kebabs from grill and let rest for 5 minutes.
